CS-01 / KITCHEN SYSTEMS

The brief

A restaurant group cannot scale on a kitchen that was arranged rather than engineered. Ticket times drift between sites, equipment fails unevenly, and the ambient temperature makes the pass unworkable in summer. The kitchen becomes the ceiling on the brand.

Aeropack Infra treats the kitchen as a process plant. Every square centimetre is measured against ergonomic efficiency, so that a kitchen in one city operates with the same metabolic cadence as one in another. Thermal loads are isolated at source rather than diluted downstream.

Chain replication & workflow rigour

We transform chaotic culinary environments into scalable engineering models. Equipment positions, service drops and drainage falls are fixed against a single reference grid, so a site fit-out becomes a repeatable build rather than a bespoke exercise.

  • Ergonomic movement mapping to cut transit steps per ticket
  • SS 316L specification on all wet and high-heat surfaces
  • 0.5 mm layout tolerance so modular units interchange between sites
  • Service risers and isolation points documented identically at every location

Heat mitigation: the 1600°C challenge

Traditional high-heat cooking is not a ventilation problem. It is a containment problem.

MOD_01

Tandoor thermal isolation

Purpose-built isolation chambers hold 1600°C internal temperatures while raising the ambient kitchen temperature by no more than 2°C.

MOD_02

Air curtain systems

Invisible barriers of high-velocity air trap heat at source, preventing spill-over into prep zones and the dining room. 12.5 m/s velocity at 42 dBA.

MOD_03

Load-responsive HVAC

Extract and make-up air modulate in real time against cooking load, so the kitchen is not over-ventilated during prep or starved during service.

Measured performance

Benchmarks from commissioned kitchen installations.

99.8% Particulate filtration

Grease and combustion particulate removed before discharge.

12.5 Air curtain velocity (m/s)

Sufficient momentum to hold the thermal boundary at the line.

42 Curtain noise (dBA)

Containment achieved without adding to the acoustic load on the pass.

+2°C Max ambient rise

Measured at the pass with tandoors at full duty.

Beyond ventilation

We engineer the air the team breathes, not just the air that leaves. Intelligent HVAC integration responds in real time to cooking loads, balancing extract against make-up air so the kitchen holds negative pressure to the dining room without pulling the doors shut.

The result is a kitchen that stays workable through a full service, and a dining room that never smells of the pass.

A kitchen that cannot be replicated is not an asset — it is a one-off. We engineer the version that can be built a hundred times.
