A restaurant group cannot scale on a kitchen that was arranged rather than engineered. Ticket times drift between sites, equipment fails unevenly, and the ambient temperature makes the pass unworkable in summer. The kitchen becomes the ceiling on the brand.

Heat mitigation: the 1600°C challenge
Traditional high-heat cooking is not a ventilation problem. It is a containment problem.
Tandoor thermal isolation
Purpose-built isolation chambers hold 1600°C internal temperatures while raising the ambient kitchen temperature by no more than 2°C.
Air curtain systems
Invisible barriers of high-velocity air trap heat at source, preventing spill-over into prep zones and the dining room. 12.5 m/s velocity at 42 dBA.
Load-responsive HVAC
Extract and make-up air modulate in real time against cooking load, so the kitchen is not over-ventilated during prep or starved during service.
